Mexican Bowl

Ingredients

  • 200g raw lean minced meat
  • Taco or Mexican seasoning mix
  • 1 tsp oil
  • 1 cup black beans
  • ½ cup corn
  • 4 tbsp avocado
  • ½ cup tomato
  • 4 cups shredded lettuce
  • 2 tbsp sour cream
  • 2 tbsp tomato sauce

Method

  1. Cook minced meat, add taco seasoning and ¼ cup water. Simmer 5 minutes or until thickened. Stir in beans.
  2. Place lettuce in a large bowl. Top with meat and beans mix, tomatoes, corn, and avocado.
  3. Top each serving with salsa and sour cream.
